

Taco Bell who? My mother in law showed me this recipe a few years ago, and it reminded me how damn good mexican pizzas are. I forgot about them to be honest, but TB discontinued them for a bit, right? I think they’re back now, but let’s just make them at home, shall we?


My kids love these and they’re completely customizable, so each kid is happy. My oldest likes her loaded up with refried beans, chs and a little meat- my middle likes his chs and meat only. And in all honesty, my youngest will just try to eat the shredded cheese… lol.
Add whatever you want to your pizzas, but we like to do a ground meat like turkey or chicken. Ground beef would be awesome, but my beloved has gout so we stay away from red meat typically. With enough seasoning though, ground turkey tastes pretty dang close to the original. Also, ground turkey is a very lean protein so the carbs/fat from the tortilla/cheese make for a good balance! You do you though. It’s the thought that counts with making these dinners yall!
I used a lot of Target’s good & gather brand for my ingredients because like I said in my last recipe post, their drive-up ordering is a hack for parents with young kids that can make a 5 min grocery run turn into a 45 min one!

I recommend a good cast iron pan to brown your meat and to crisp up the tortilla. Amazon has awesome ones, but you can get a good one at Target/Walmart as well. Thrift stores is another option, but just make sure it’s not crazy-rusted. I have a tutorial on how to clean and season your cast iron pans, that I will link here later.
Ingredients:
1 lb ground meat (turkey, beef, chicken)
Your favorite taco seasoning
6 inch flour tortillas
Oil (I like avocado or vegetable if I don’t have enough avo)
Enchilada sauce
Refried beans
Shredded cheese
Toppings (a must): sour cream, cilantro, green onion
- Cook your meat to your liking
- Fry the tortillas

3. Assemble your pizza how you like! We usually do 2 layers and start with a refried bean base, then add meat sauce cheese.
4. On a parchment lined cookie sheet, bake your pizzas at 400° for 8-10 minutes or so until the cheese gets melty. Let sit for a few minutes on your stove to cool down. Cut into 4s. Top with sour cream, green onion, cilantro and salsa. Enjoy!
